Tucked about 30 minutes inland from the port city of Ensenada in Baja California, Valle de Guadalupe is Mexico's emerging wine growing region, responsible for 80% of mexican wine production. With about 100+ wineries producing world class vintages, the "Valle" (as locals like to call it), has been on the radar of every food & wine enthusiast.

Cheese makers, olive oil producers, animal raising farms, organic gardens, winemakers, craft breweries, the prestigious seafood bounty of Baja waters, it is no surprise our region is a chefs dream come true.

Having worked under Michelin star chefs, chef Oscar an East Los Angeles native, practices a globally influenced cuisine featuring plates inspired by the Mediterranean, 'Franco-Afrique,' India and Southeast Asia. Constantly changing and evolving to showcase his creativity and the abundance of produce sourced from nearby farmers and markets.

The patriarch of the Animalon family since it’s second season in 2018.
